Bring us a product that has already been made and we will run it several ways to find the drying method that gives you the finished result you want. Because processing, drying, and milling all sit in one plant, a trial can change one variable at a time instead of one vendor at a time.

Why development runs go wrong
A Spec That Reads Fine on Paper Can Still Fail in a Dryer.
Freeze-drying does not treat every material the same way. Fat content, piece size, moisture, and density all change what comes out the other end, and the differences do not show up until something has actually been run.

The Material Behaves Differently Than Expected.
High-fat material such as heart mills differently from a lean muscle cut. A powder that clumps in the mill is a formulation problem you want to find in a trial, not in a production run.
The Piece Size Is Wrong for the Product.
A diced inclusion that looks right raw can come out of the dryer too small, too fragile, or too uniform for what the pack is meant to look like on shelf.
The Spec Was Written for a Different Process.
A mesh and density spec copied from a supplier who spray-dries or air-dries will not necessarily be the right target for a freeze-dried version of the same ingredient.

If you want a freeze-dried meal, the meal needs formulating first, and there are people who do that better than we would. Bring us the made product and our part begins: finding the drying method that produces the finished result you actually want.
Trial batches
Run the material several ways before you commit a program to it, and see what the process actually does to your ingredient.
Rehydration to spec
The finished piece has to come back in the time and the manner your product needs. That target is what the trial is chasing.
Milling trials
Try the material through the hammer mill and the cryo mill and compare, instead of guessing which one your spec needs.
A path to production
What worked in the trial runs on the same equipment at volume, so scaling up is not a re-qualification exercise.
